Probably the most underrated wild venison joint. Shoulder on the bone from any deer species is ideal for long slow roasting making the perfect stew for cold winter nights.
The presence of the bone infuses flavours into the wild venison shoulder which makes the meat soft and full of richness. Once cooked the venison can be pulled from the bones and served hot or cold. Decant the juices for a superb stock or red wine gravy.
So if you are looking for a fresh, wild, sustainable meat for your winter menu then wild venison shoulder on the bone has to be top of the list.
