Made from 65% Wild Venison with shoulder of locally produced Free Range Pork. The addition of the leek and some carefully selected spices gives these sausages a delightful tang. Our most popular product at the summer markets. They can be pan-fried in olive oil, grilled, or added to the diced haunch to make a superb casserole.
